Qualified individuals must have strong communication and organizational skills. They must have a track record as enthusiastic, responsible professionals who can lead exceptional teams in managing daily operations. Candidates must be highly energetic and professional, passionate about food quality, hospitality, and financial accountability. Must have at least 3 years of experience working in a sizable and busy kitchen in a support role. Responsibilities will include overseeing service REPORTS TO: Kitchen Manager DUTIES AND RESPONSIBILITIES Open and close the dining facility. Cooks are responsible for delivering food cooked to the customer\'s specifications- food must also be safe and fresh. Ensure food for use is in-house and ready for production. Ensure ingredients and final products are fresh. Follow recipes, including measuring, weighing, and mixing ingredients. Bake, grill, steam, and boil meats, vegetables, fish, poultry, and other foods. Present, garnish, and arrange final dishes. Serve food to clients. Maintain a clean and safe work area, including handling utensils, equipment, and dishes while following HACCP guidelines. Handle and store ingredients and food. Maintain food safety and sanitation standards. Cool leftovers rapidly within 2 hours down to 70 degrees & then 4 hours to 40 degrees. Ensure that all food products are dated when put in walk-in and when they need to be discarded. Clean and sanitize work areas, equipment, and utensils. Execute opening and closing procedures. Set up workstations with the required ingredients and equipment. Check the quality and freshness of ingredients. Monitor station inventory levels. Accommodate guests? special requests. Operate kitchen equipment and clean such as broilers, ovens, grills, and fryers. Assist manager with all orders and receiving goods and storing them following HACCP and FIFO. Receives food ingredients and supplies from the main kitchen and pantry as required for daily operations. Review the production schedule to determine food requirements, including the variety and quantity of food for preparation, and to assemble supplies and equipment needed for daily cooking activities. Prepares and displays a wide variety of foods such as vegetables, fruits, meats, soups, salads, simple pastries/breads, and cereals following prescribed recipes using a full range of cooking methods; tests foods being cooked for quality. Completes production sheets and other records as required. Maintains clean work areas, utensils, and equipment. Caters special events as required. Troubleshoots daily needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual conditions. May be required to prepare special diets according to prescribed standards. May record inventory and/or order stock. Must be ServSafe Food Manager or Food Handler and Allergen certified!
