Job Summary

Manager, Concessions, Commissary, and Food Trucks is responsible for the management of a multifaceted concession operations including McGuirk Stadium, Mullins Center, athletic events, and campus events along with the food trucks (2), food trailer and the retail commissary. Interacts directly with campus partners to assess evolving business requirements meet service and accommodation demands.

Essential Functions

  • Assists Manager, Dining Commons with preparation of budgets and forecasts for each business unit with short- and long-term planning goals.

  • Oversees monitoring of business trend data with strict adherence to all established food and labor budgets using Key Risk Indicators (KRIs).

  • Uses financial databases and systems to analyze financial data for internal and external reporting and decision-making reconciliations, ranging from $4-5M in retail volume.

  • Forecasts concession events and adjusts production based on expected attendances using P&L (profit and loss) methodology.

  • Works closely with cash office to operate off site events adhering to cash policy and campus guidelines.

  • Initiates, develops, implements, and maintains operating systems that improve efficiency and profitability; develops goals and objectives for various business units.

  • Follows up at each location daily to ensure compliance and provide support, attends all important events, and provides support to the on-duty manager.

  • Ensures sanitary standards, food preparation and presentation standards are adhered to and constantly improved.

  • Oversees product selection and placement, and food truck setups along with concessions venues and layouts. Supports rollout of new product lines through appropriate marketing and execution.

  • Participates in establishing pricing in accordance with margin targets and recommends new pricing as necessary.

  • Trains staff to place orders and conduct timely physical inventories using the Food Pro Menu Management and Inventory System; check and enforce purchasing guidelines. Places food orders for food trucks and BBQs.

  • Manages the scheduling maintenance and repair of mobile cooking fleet, including two food trucks, one mobile kitchen unit, multiple mobile concessions carts, and one concession trailer.

  • Directs the development of an annual sales report for sports concessions (football, men’s basketball, and men’s ice hockey) used to calculate contract percentages and payments.

  • Manages the control and inventory of alcoholic beverages sold under the concessions liquor license at McGuirk Stadium and Mullins Center, as well as any other smaller closed/private athletic venues as requested.

  • Oversees personnel activities including hiring, training, and supervision of employees, ensuring that staff receive the necessary education, training, and ongoing learning.

  • Directly responsible for staff training and development and staff scheduling within strict budget targets and service requirements.

  • Acts as Assistant Manager, Dining Commons in their absence and will be responsible for the daily operations of the Dining Commons. May be assigned to other units within Dining Services as business directs.

  • Collaborates with Executive Chef and associate Director in menu and concept design and review and creating and implementing daily specials and marketing activity on food trucks and at concessions venues to consistently improve sales.

  • Drives social media platforms to promote market events and food trucks. Enforces signage policy and ensures signage is in place.

  • Responds and interacts with customers; maintains formal and informal communication with students and guests.

Minimum Qualifications (Knowledge, Skills, Abilities, Education, Experience, Certifications, Licensure)

  • Bachelor’s Degree in related field with 5 years’ experience in retail food service management to include marketing, merchandising, advertising, and retail accounting systems.

  • Supervisory Experience

  • Must be organized, detail oriented with strong people skills.

  • Advanced computer skills with Microsoft and other web-based applications.

  • Knowledge of computerized food production management systems.

  • Driver’s License required.

  • Serve Safe Certification.

Physical Demands/Working Conditions

Requires the ability to balance, carry, push, pull, stand, bend, drive, reach, sit, twist, lift and perform repetitive movements.

This position is designated as essential personnel.

Work Schedule

Varies depending on departmental needs, including weekends, evenings and holidays, and irregular shifts.
