CITY of SOMERVILLE Kitchen Manager in Somerville, Massachusetts

The Kitchen Manager manages the Somerville Arts Council\'s (SAC) Nibble Kitchen, a cultural culinary economic development initiative, located in Bow Market. The employee focuses on workforce development and will be the Person In Charge responsible for the overall operations of the SAC Nibble Kitchen. Essential Functions The essential functions or duties listed below are intended only as illustrations of the various type of work that may be performed. Oversee Nibble Kitchen Ensure that Kitchen Standard Operating Procedures are rigorously followed and enforced. Manage entrepreneur and kitchen schedule: coordinate kitchen time with Nibble entrepreneurs and vendor deliveries. Work with entrepreneurs to develop teams for front and back of house. Work with entrepreneurs to develop cost effective and marketable food. Ensure Nibble entrepreneurs create food that is cooked and served correctly in a timely manner, portioned correctly and attractive. Be point person between Nibble Kitchen, Arts Council, Bow Market, Inspectional Services Department (ISD), and entrepreneurs. Ensure Nibble Kitchen meets all sanitary standards, including all applicable local Board of Health regulations and State Sanitary Code related to food establishments. Provide ServeSafe training for Nibble entrepreneurs and administer ServeSafe exams Ensure customers have a pleasant dining experience and address any customer concerns or complaints. General kitchen administration work and kitchen maintenance Track time/hours of entrepreneurs Manage bookkeeping, with oversight from Nibble Arts Coordinator Manage/order food Order supplies and equipment as needed Oversee inventory, ensure kitchen cleanliness, maintain equipment maintenance Manage deep cleaning schedule and periodic grease trap cleaning according to standard operating procedures Organize & maintain Nibble files (all electronic and paper records) Oversee and assist with trash removal Kitchen Support relating to Farmers Markets and Cooking Classes Maintain schedule and operational standards for kitchen use related to all events including Farmers? Markets, Festivals, Cooking Classes, etc. Execute training and provide operational support for all users of Nibble Kitchen. Collect kitchen-use fees, execute pay-outs, and maintain clear financial records for all kitchen use related to events such as Farmers? Markets, Festivals, Classes, etc. Coordinate and provide support for any external users of Nibble Kitchen, i.e. pop-ups in support of cultural events, etc. Recommended Minimum Qualifications Education and Experience: High School diploma, or equivalent, and one to three (1-3) years of food service, experience; or any equivalent combination of education, training and experience which provides the required knowledge, skills and abilities to perform the essential functions of the job. Special Qualifications: Additional qualifications: CPR and First Aid certification Must hold the following current Massachusetts certifications per 105 CMR 590 at or within one month of hire: Food Protection Manager Certification Allergen Awareness Training ServeSafe certification. ServeSafe training will be provided by the City to the incoming employee if not already obtained, and employee will be required to keep certification current. Failure to keep all certifications current may result in separation of employment. Choke Saver certification preferred. Hours: Full Time (Employee standard schedule includes evenings and weekends and may require flexibility.Typical schedule is from Tues-Sat 10am-6pm but flexibility is required.)
